This salad during the summer in Michigan for me is always a hit. It is one of my absolute favorite and easy recipes that has a perfect balance of fresh, citrusy and satisfying flavor all at once. Heirloom tomatoes come in different sizes, colors and shapes. The season for heirloom tomatoes is usually late summer and early fall. Always opt for organic when possible as they tend to be on the EWG (Environmental Working Group) dirty dozen list year after year, meaning it contains harmful residues from pesticides. You can check out the dirty dozen list here on the EWG site as it slightly changes every year. Heirloom Tomato Salad
- 1 heirloom tomato
- 1/4 cucumber
- feta cheese
- mint leaves
- celtic sea salt
- 1 squeezed lemon
- extra virgin olive oil
- Cut the heirloom and cucumber in slices
- In a large plate spread the slices of heirloom tomato and cucumber
- Garnish with mint, dill, feta cheese
- Sprinkle celtic sea salt, squeezed lemon and drizzled EVOO. Enjoy!
